Preparation of Lauki
Start by washing the lauki properly. Peel the skin and cut it into large pieces. Remove the seeds if they are hard or mature. Grate the lauki using a grater or chop it very finely.
You can also roast the lauki directly on flame for a smoky flavour, similar to baingan bharta. Roast until the outer skin becomes charred and soft. Once cooled, peel the skin and mash the pulp. This smoky method gives the dish a rich taste.
If you prefer a quicker version, simply boil or steam the grated lauki for 5-7 minutes and squeeze out extra water.
Cooking Method
Heat oil or ghee in a pan. Add cumin seeds and let them splutter. Then add chopped onions and sauté until golden brown. Add green chilies and ginger-garlic paste. Cook for a minute until the raw smell disappears.
Now add chopped tomatoes and cook until they become soft and mushy. Add turmeric powder, red chili powder, coriander powder, and salt. Mix everything well and cook the masala until oil starts separating from the sides.
Add the cooked or roasted lauki to the pan. Mix thoroughly so the lauki absorbs all the flavours of the masala. Cook on medium flame for 8–10 minutes while stirring occasionally.
If the mixture looks watery, cook for a few extra minutes until the moisture evaporates and the bharta becomes thick. Mash slightly with the back of a spoon for a smooth texture.
Finally, garnish with freshly chopped coriander leaves.
