Ingredients

For the Dal

  • ½ cup toor dal (arhar dal)

  • ¼ cup moong dal

  • 3 cups water

  • 1 onion, finely chopped

  • 2 tomatoes, finely chopped

  • 1 tablespoon ginger-garlic paste

  • 2 green chillies, chopped

  • ½ teaspoon turmeric powder

  • 1 teaspoon red chilli powder

  • 1 teaspoon coriander powder

  • Salt to taste

For the Tadka

  • 2 tablespoons ghee

  • 1 teaspoon cumin seeds

  • 4 garlic cloves, sliced

  • 2 dried red chillies

  • A pinch of asafoetida (hing)

  • 1 teaspoon Kashmiri red chilli powder

  • Fresh coriander leaves for garnish

Method

Step 1: Cook the Dal

Wash the toor dal and moong dal thoroughly and pressure cook them with water, turmeric, and a little salt for 3–4 whistles or until soft. Once cooked, mash the dal lightly with the back of a spoon to achieve a creamy consistency.

Step 2: Prepare the Masala

Heat a tablespoon of oil or ghee in a pan. Add chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and cook for a minute until fragrant. Add the chopped green chillies and tomatoes, then cook until the tomatoes soften completely.

Mix in the coriander powder, red chilli powder, and a little salt. Cook the masala until the oil starts separating from the sides.

Step 3: Combine the Dal

Pour the cooked dal into the masala and mix well. Add a little hot water if the consistency is too thick. Let the dal simmer for 8–10 minutes on low heat so the flavours blend beautifully.

Step 4: Prepare the Signature Tadka

In a small pan, heat the ghee. Add cumin seeds and let them splutter. Add sliced garlic and fry until golden brown. Stir in the dried red chillies and a pinch of hing. Turn off the heat and quickly mix in the Kashmiri red chilli powder.

Immediately pour this sizzling tempering over the simmering dal. Cover the pan for a minute to trap the aroma.

Step 5: Garnish and Serve

Garnish with freshly chopped coriander leaves and a small dollop of butter if desired. Serve hot with jeera rice, steamed basmati rice, roti, tandoori naan, or laccha paratha. Pair it with onion salad, pickle, and roasted papad for a complete dhaba-style meal.
